Brat Burgers


  • 2 lbs ground pork
  • 4 tsp Kosher salt
  • 2 tsp white pepper
  • 4 tsp dried marjoram
  • 4 garlic cloves, minced or pressed
  • 1 tsp ground coriander
  • ½ tsp ground nutmeg
  • 6 burger buns of your choice
  • butter
  • whole grain mustard
  • 32 oz sauerkraut


  1. Combine the pork and spices in a large bowl and mix thoroughly with your hands until the spices are evenly incorporated.  Form into 6 large flat patties (burgers will shrink and thicken as they cook).


  2. Grill or pan fry in a little bit of oil on medium heat for about 4 minutes per side or until done.


  3. Toast the burger buns and butter them.  Spread with whole grain mustard.  Place a brat patty on each burger bun and top with sauerkraut.


  4. Makes six burgers.
