Radicchio and Beans


  • 1 small head radicchio
  • 1 (15 oz can) small red beans or kidney beans
  • 1 (15 oz can) butter beans or white beans
  • ¼ cup red onion, minced
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp salt
  • black pepper


  1. Finely shred the radicchio and place it in a large serving bowl.
  2. Drain and rinse the beans and add them to the bowl along with the minced onion.
  3. Add the lemon juice, olive oil, salt and pepper and toss well.
