- 1 small head radicchio
- 1 (15 oz can) small red beans or kidney beans
- 1 (15 oz can) butter beans or white beans
- ¼ cup red onion, minced
- 3 Tbsp fresh lemon juice
- 2 Tbsp extra virgin olive oil
- ¼ tsp salt
- black pepper
- Finely shred the radicchio and place it in a large serving bowl.
- Drain and rinse the beans and add them to the bowl along with the minced onion.
- Add the lemon juice, olive oil, salt and pepper and toss well.
