Pumpkin Spice Bread


  • ⅓ cup melted coconut oil
  • ½ cup honey
  • 2 eggs
  • 1 cup pumpkin purée
  • ¼ cup milk
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp allspice
  • ¼ tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 ¾ cups whole wheat pastry flour


  1. Preheat oven to 325°F.  Grease a loaf pan.
  2. In a large bowl whisk together the melted coconut oil and the honey until smooth.
  3. Add the eggs and whisk well.
  4. Whisk in the pumpkin purée, milk, spices, baking soda, vanilla, and salt until well blended.
  5. Stir in the flour with a wooden spoon until just moistened.
  6. Pour the batter into your greased loaf pan and bake for 55 to 60 minutes or until a toothpick or cake tester inserted in the center comes out clean.
  7. Remove from the oven and let rest for 10 minutes or so before taking out of the pan.  Allow to cool completely on a cooling rack before slicing.
