- 1 bunch Tuscan kale
- olive oil
- 1-2 cups cooked chicken
- 1/2 cup grated Parmesan cheese
- Caesar salad dressing
- croutons, optional
- Remove stems from the kale, finely chop and place in a large mixing bowl.
- Drizzle with a little bit of olive oil. Use your fingers to massage the oil into the kale to soften it.
- Toss chicken and parmesan into the salad.
- Drizzle with a little bit of your favorite Caesar salad dressing and toss well.
- Top with croutons if you’d like.
