Kale Chicken Caesar Salad


  • 1 bunch Tuscan kale
  • olive oil
  • 1-2 cups cooked chicken
  • 1/2 cup grated Parmesan cheese
  • Caesar salad dressing
  • croutons, optional


  1. Remove stems from the kale, finely chop and place in a large mixing bowl.
  2. Drizzle with a little bit of olive oil.  Use your fingers to massage the oil into the kale to soften it.
  3. Toss chicken and parmesan into the salad.
  4. Drizzle with a little bit of your favorite Caesar salad dressing and toss well.
  5. Top with croutons if you’d like.
